February 13 – Got in the van and looked at the odometer. Just made me smile.
February 14 – Made my favorite dip for dinner with friends this evening. I can't take the credit for it though. My sweet friend Mandi gave me the recipe. Warning it's quite addictive. I can't eat just one bite. I'll need to walk 10 miles to get rid of all the weight I'll gain tonight.
And here's the recipe – Hot Bacon and Cheese Dip (Mandi's version).
16 oz cream cheese
1 1/2 cup mayonnaise
1/2 c cheddar cheese
1 c. pepper jack or colby jack
tony's creole seasoning
1 c ritz crackers
Soften cream cheese. With electric mixer beat until cream cheese is smooth and gradually add mayo. Add jalapenos (at your discretion) and about 1 tbsp of jalapeno juice. Add onion powder and garlic salt to taste. Add a couple of dashes of Tony's seasoning also. Add cheddar and jack cheese to mixture. Pour into greased baking dish an dotp with bacon bits and ritz crackers. Bake 30-45 minutes.
