Menu Monday 5/16/10

Menu #1 – To Die for Crock Pot Roast, Roasted Potatoes, Steamed Broccoli

Menu #2 – Swiss Chicken (see recipe below), Corn, Garlic Seasoned Lima Beans

Menu #3 – Oven Fried Pork Chops, Saffron Rice, Seasoned Green Beans

Menu #4 – Grilled Steak (trying the marinade from this recipe), Basil Pesto Penne Pasta, Baked Summer Squash

Menu #5 – Baked Herbed Fish Fillets, Roasted Cauliflower, Wild Rice

Swiss Chicken

6 boneless, skinless chicken half-breasts

6 slices Swiss cheese

Garlic Powder


1 can Cream of Chicken Soup

1/2 cup milk

1 cup Herb-Seasoned Stuffing Mix

1/4 cup melted butter

Place chicken in baking dish. Sprinkle with garlic powder and pepper to your taste. Mix soup and milk in a bowl and pour over chicken. Sprinkle with stuffing mix and drizzle with melted butter.

Bake at 350 degrees covered with foil for 50 minutes or until done.
