Menu Monday – March 22

Hello all! I desperately need this week’s Menu Monday. After a week of Spring Break and traveling and then doing next to nothing I must get myself organized. One of my plans this week is to design a menu planner to share with everyone and help keep myself organized.

Menu #1 – Poppy Seed Chicken Casserole, Rice, Roasted Broccoli (This is kiddo’s favorite meal so I have to cook it a couple of times a month.)

Menu #2 – Oven Fried Pork Chops, Yellow Rice, Sweet Peas

Menu #3 – Wild Rice Chicken (recipe found here), Garlic Butter Green Beans (My own concoction I’m going to try. Will share here soon if it works.)

Menu #4 – Grilled Pork Tenderloin (hoping to find a new marinade), Roasted Cauliflower, Grilled Corn on the Cobb

Menu #5 – Baked Herbed Fish Filets (recipe below), Roasted New Potatoes, Salad

Baked Herbed Fish Filets

4 fish filets

1/2 c. Italian flavored bread crumbs

1/4 c. Parmesan cheese, grated

1/4 tsp. garlic powder

1/4 tsp. salt

1 egg white, lightly beaten

Combine bread crumbs, cheese, garlic powder, and salt in ziploc bag. (This mixture and fish can be frozen in seperate bags until ready to cook.) Lightly beat egg white and dip filets in it. Put filets, one at a time, in bag with bread crumb mixture, making sure each is coated. Arrange fish in baking dish and bake in preheated oven on high for 5 minutes. Makes 4 servings.
