Hello my few faithful blog readers! Lots of thoughts to share and they are still forming in my mind. I think I’ll be back to posting regularly now. Hopefully. 🙂 But for today I’m thinking I just need to get back to my routine blogging. So here I am with my dinner menu for the week.
Menu #1 – Â easy creole crock-pot chicken, saffron rice, broccoli
Menu #2 – oven fried pork chops (recipe below), creamy pesto pasta, herb-seasoned sweet peas(experimenting with the peas here – will let you know how it turns out)
Menu #3 – marinated grilled steaks, salad with this dressing, roasted new potatoes (chopped and seasoned with olive oil & herbs).
Menu #4 – apple jelly crock-pot roast, roasted cauliflower, garlic butter lima beans
Menu #5 – baked herbed fish fillets, salad, green bean bundles
Oven Fried Pork Chops (this recipe is also great using chicken)
Preheat oven to 350 degrees.
Ingredients:
1 cup Italian Bread Crumbs
1 tsp ginger
1/2 tsp paprika
1/2 tsp garlic powder
1/2 cup melted butter
1 egg
1/4 cup pineapple juice or orange juice
2 Tbsp soy sauce
6 pork chops
Combine first 4 ingredients. Combine egg, juice and soy sauce. dip pork chops in egg mixture, roll in bread crumb mix and place on greased pan. Bake for 30 – 40 minutes or until done. 10 minutes before done drizzle with melted butter.
